Easy Shrimp Scampi
A flavorful and easy shrimp scampi in less than 20 minutes!

- 1 lb 450g large shrimp, peeled and deveined
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1 small white onion diced small
- 4 cloves garlic minced
- ½ tsp red pepper flakes optional
- 1 tsp garlic powder
- ½ cup dry white wine or chicken broth
- Juice of 1 lemon 3-4 Tbsp
- Salt and freshly ground black pepper to taste
- 12 oz 340g linguine or spaghetti (optional)
- 2 tbsp fresh parsley chopped
- Grated Parmesan cheese optional
Cook the Pasta (Optional):
If serving with pasta, cook it in salted boiling water until al dente. Reserve ½ cup of the pasta water, (just in case you like a saucier dish, add this at the end) then drain and set aside.
Make the Sauce:
In a large skillet, heat 2 Tbsp butter and 2 Tbsp Olive oil over medium high heat. Add the onions and sautee for 3-5 minutes . Then, stir in minced garlic. Sauté for 30 seconds, or until fragrant. Pour in the white wine and fresh lemon juice. Let it simmer for 2 minutes, reducing slightly.
Cook the Shrimp:
Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and opaque.
Add the red pepper flakes and garlic powder. Sauté for 30 seconds, or until fragrant. Pour in the white wine and let it simmer for 2 minutes, reducing slightly.
