Easy Shrimp Scampi

A flavorful and easy shrimp scampi in less than 20 minutes!

Ingredients
  

  • 1 lb 450g large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 small white onion diced small
  • 4 cloves garlic minced
  • ½ tsp red pepper flakes optional
  • 1 tsp garlic powder
  • ½ cup dry white wine or chicken broth
  • Juice of 1 lemon 3-4 Tbsp
  • Salt and freshly ground black pepper to taste
  • 12 oz 340g linguine or spaghetti (optional)
  • 2 tbsp fresh parsley chopped
  • Grated Parmesan cheese optional

Instructions
 

Cook the Pasta (Optional):

  • If serving with pasta, cook it in salted boiling water until al dente. Reserve ½ cup of the pasta water, (just in case you like a saucier dish, add this at the end) then drain and set aside.

Prepare the Shrimp:

  • Pat the shrimp dry with paper towels and season lightly with salt and pepper.

Make the Sauce:

  • In a large skillet, heat 2 Tbsp butter and 2 Tbsp Olive oil over medium high heat. Add the onions and sautee for 3-5 minutes . Then, stir in minced garlic. Sauté for 30 seconds, or until fragrant. Pour in the white wine and fresh lemon juice. Let it simmer for 2 minutes, reducing slightly.

Cook the Shrimp:

  • Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and opaque.
  • Add the red pepper flakes and garlic powder. Sauté for 30 seconds, or until fragrant. Pour in the white wine and let it simmer for 2 minutes, reducing slightly.

Finish the Sauce:

  • Stir in the lemon juice and remaining tablespoon of butter. Season with salt and pepper to taste.

Combine:

  • If serving with pasta, add the drained pasta to the skillet along with a splash of reserved pasta water. (Optional) Toss until well-coated.

Serve:

  • Garnish with parsley and serve immediately. For extra flavor, sprinkle with grated Parmesan cheese.
