Healthy Cabbage Soup Recipe

- 1 small head of green cabbage chopped
- 1 large onion diced
- 2 carrots peeled and sliced
- 2 celery stalks chopped
- 3 garlic cloves minced
- 1 large zucchini diced (optional)
- 1 14oz can diced tomatoes
- 6 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.
Add garlic, smoked paprika, and thyme. Stir for 1 minute, until fragrant
Stir in the cabbage, zucchini (if using), and diced tomatoes. Mix well to combine.
Pour in the vegetable broth and add the bay leaf. Bring the soup to a boil, then reduce the heat to low. Let it simmer for 25–30 minutes, stirring occasionally, until the vegetables are tender.
Season to Taste: Remove the bay leaf and season the soup with salt and pepper to taste.
Serve: Ladle the soup into bowls and garnish with fresh parsley
