Healthy Cabbage Soup Recipe

Ingredients
  

  • 1 small head of green cabbage chopped
  • 1 large onion diced
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 large zucchini diced (optional)
  • 1 14oz can diced tomatoes
  • 6 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.
  • Add garlic, smoked paprika, and thyme. Stir for 1 minute, until fragrant
  • Stir in the cabbage, zucchini (if using), and diced tomatoes. Mix well to combine.
  • Pour in the vegetable broth and add the bay leaf. Bring the soup to a boil, then reduce the heat to low. Let it simmer for 25–30 minutes, stirring occasionally, until the vegetables are tender.
  • Season to Taste: Remove the bay leaf and season the soup with salt and pepper to taste.
  • Serve: Ladle the soup into bowls and garnish with fresh parsley

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days.
Freezing: Freeze in portion-sized containers for up to 3 months. Thaw overnight in the fridge and reheat on the stove or in the microwave.
